остаточный сахар (натуральный сахар из виноградных ягод, который не переработался в спирт в процессе ферментации и дает вину ту или иную степень сладости; наименьшее количество остаточного сахара содержат сухие вина 0,1 - 0,2 %, в полусухих (полусладких) винах содержится от 1 до 3 % сахара, а, напр., в десертных винах из ягод позднего сбора содержание сахара может достигать 30 %)
